Rooster & Lark Breakfast Skillets contain all the vegetables for an omelette or scramble, pre-seasoned and flash frozen. Simply sauté and add fresh eggs at home.

Southwest Skillet

This is same breakfast the original US cowboys ate. We don't have a source for that fact, but we believe it. The Southwest Skillet contains a bold blend of chopped avocado, butternut squash, onions, red & green bell peppers, and seasoned to perfection with garlic, cumin, paprika and chipotle powder. Just add eggs!

Before the siege of Troy, legend has it that Achilles feasted on our Greek Skillet. Nourished with lush tomatoes and savory feta, Achilles was well nourished to battle Hector at the gates of Troy. The Greek Skillet is a stoic blend of chopped mushroom, cherry tomato, spinach and feta cheese seasoned with dill and garlic. Just add eggs!

As the American settler traveled west, he foraged for what he could, living off the land. Now these ingredients of necessity make up our amazing Rocky Mountain Skillet. It contains sweet potato, kale, onions and bell peppers, seasoned with a rustic blend of rosemary, thyme and oregano. Just add eggs!

Rooster & Lark was founded by Aaron Falber at the Denver Farmer’s Markets in the summer of 2014. He first had the idea for a “just add eggs” frozen vegetable mix when he was waking up at 5am every morning to prepare an omelette before heading to his 6am Crossfit class. Chopping vegetables every morning started to seem like more of a burden than a healthy choice. Determined to find a better way, he went to the grocery store to buy frozen vegetables, only to be disappointed by the offerings. Existing frozen vegetables consisted mainly of large chunks of vegetables that were too big for eggs and were often unappealing as omelette ingredients. Peppers, onions, and potatoes were about the only frozen items you could find for an omelette and even then, they were sold in slices rather than a small dice.

It was at this moment when the idea for Rooster & Lark was born; all the frozen vegetables for an omelette or scramble, preseasoned and flash-frozen. Just sauté in the pan and add fresh eggs at home.

Soon after dreaming up his idea for a breakfast solution Aaron began developing the product at home. He would use his day off to drive 1.5 hours from Bloomington to Indianapolis to buy dry ice & vegetables to experiment with freezing different vegetables. Within a few months, Aaron decided to leave his sales position at E&J Gallo Winery and Monarch Beverage to pursue Rooster & Lark full time. He moved to Denver to take advantage of the growing natural products community that was rooted in Boulder, CO. Today Rooster & Lark is available in 600 grocery stores around the country.

About The Founder

Aaron graduated from Indiana University in 2012 with a degree in Economics. After college he worked for E&J Gallo Winery and Monarch Beverage in the grocery industry selling wine to grocery stores across Indiana. He is a health and breakfast enthusiast who is excited to help others incorporate more vegetables into their daily life in an easy and delicious way!
