Chicken Parmesan

Sneak some vegetables into your chicken parm with Rooster & Lark Rocky Mountain Skillet

Ingredients

  • chicken breast

  • flour

  • eggs

  • bread crumbs

  • pasta sauce

  • Rooster & Lark Rocky Mountain Skillet

Directions

  1. Cut chicken breasts in half if they are thick. Use meat tenderizer to make even thinner if desired.

  2. Coat chicken breast in flour, then egg, then bread crumbs.

  3. Lightly fry in oil for 3 minutes each side or until chicken is crisp on the outside but raw on the inside

  4. In baking dish add chicken and cover with pasta sauce, Rooster & Lark Rocky Mountain Skillet, and parmesan cheese

  5. Bake for 1 hour at 350 and you’re done!

Rooster & Lark Chicken Tortilla Soup

This is an easy weeknight dinner loaded with veggies that requires zero chopping! Double the batch and keep half in the freezer for another time.


Ingredients

  • 2 chicken breasts

  • 1 can diced tomatoes w/ green chillies

  • 1 can pinto beans

  • 1 bag frozen corn

  • 8 cups chicken broth

  • 1 bag Rooster & Lark Southwest Skillet

Directions

  1. Combine chicken, tomatoes and broth in large pot and simmer for 1 hour

  2. Add corn, beans and Rooster & Lark. Simmer for 30 more minutes

  3. Remove chicken and shred. Add back into soup and serve.

1 lb ground beef

Shredded cheese

1/4 tsp salt

Directions

  1. Combine ground beef, cheese, salt and Rooster & Lark Southwest Skillet

  2. Form into burger patties

  3. Grill 5-10 minutes or until cooked through

These are my wife’s favorite. She likes them more than eggs!

Ingredients

Rooster & Lark Southwest Skillet

1 tbsp oil

Shredded cheese

Tortillas

Directions

  1. Sauté Rooster & Lark Southwest Skillet in 1 tbsp oil over medium high heat

  2. Layer cheese and Rooster & Lark Southwest Skillet over tortilla

  3. Place other tortilla on top to form quesadilla

  4. Spray grill with cooking spray and cook for 5-10 minutes or until cheese is melted. If using a pan, cook 5 minutes each side.

Keep it easy this Sunday with this no-chopping-required quiche.

Ingredients

Rooster & Lark Greek Skillet

6 eggs

1 cup milk or cream

1/4 tsp salt

1/2 cup shredded cheese

4 tbsp flour

Directions

  1. Combine eggs, salt, and milk in a bowl and mix thoroughly

  2. Mix cheese and flour together and layer on bottom of pie crust

    • optional- pre bake pie crust and cheese for 10 minutes on 350 degrees

  3. Sprinkle desired amount of Rooster & Lark Greek Skillet into pie crust on top of cheese layer

  4. Pour eggs into pie crust

  5. Bake for 1 hour at 350 degrees

Campfire Southwest Quesadillas

Campfire Southwest Quesadillas make for an easy dinner at the campsite!

Ingredients

Rooster & Lark Southwest Skillet Quesadillas

Tortillas

Cheese

Tin Foil

Olive oil, olive oil spray or butter

Directions

  1. Cook Rooster & Lark Southwest Skillet and 1 tbsp of olive oil in tin foil over campfire for 5-10 minutes or until hot

  2. Lay a lightly oiled sheet of tin foil over the campfire grate. Place tortilla on top.

  3. Layer tortilla with cheese and Rooster & Lark Southwest Skillet

  4. Add second tortilla on top and cook 5 minutes each side, or until cheese is melted. Careful, don’t let it burn!

  • 1 Bag Rooster & Lark Great with Southwest, Rocky Mountain, or Greek!

  • Salt & Pepper to taste

Level up (take your meal to the next level!)

  • 1 egg

  • 1 cup breadcrumbs or crushed crackers

  • 1 cup milk

Directions

  1. Mix all ingredients together in a bowl.

  2. Add the Rooster & Lark directly from frozen, no need to thaw.

  3. Bake at 400 degrees for 45-60 minutes or internal temp of 160
